  • 1 (15-ounce) can of Black Beans
  • 1 large ripe Avocado
  • ½ cup of Frozen or Canned Corn
  • ¼ cup of finely chopped Red Onion
  • ¼ cup of fresh Cilantro
  • 1 tablespoon of Lime Juice
  • ½ teaspoon of Cumin Powder
  • ¼ teaspoon of Chili Powder
  • Salt and Black Pepper
  • 4 large (10-inch) Flour Tortillas

Instructions

  1. Use a fork to mash the ripe avocado in a medium bowl until creamy or slightly chunky as preferred, then stir in the freshly squeezed lime juice to preserve its color.
  2. Add the rinsed black beans, thawed or drained corn, finely chopped red onion, and chopped cilantro to the bowl with avocado and lime juice.
  3. Season the mixture with cumin powder, chili powder, salt, and black pepper, then gently fold everything together without breaking up the beans too much.
  4. Warm the tortillas to make them softer and easier to roll by heating each side for 15-20 seconds in a skillet or microwaving wrapped in a damp paper towel for 30-45 seconds.
  5. Place one-quarter of the filling in the center of each tortilla, fold the short sides over the filling, then roll tightly from the edge closest to you and seal the burrito.
  6. Serve the burritos immediately while warm for the best taste and texture.
