- 6 medium carrots
- 1 tablespoon olive oil
- ¼ teaspoon coarse Kosher salt
- ⅛ teaspoon black pepper
- 1 tablespoon unsalted butter melted
- 1 ½ tablespoons honey
- 2 cloves garlic minced
Instructions
- Warm up the air fryer to 370° F and let it sit for 5 minutes.
- Cut the carrots into diagonal pieces about 2 inches long, then halve or quarter them lengthwise depending on thickness.
- Toss the carrot pieces in a bowl with olive oil, salt, and pepper until evenly coated.
- Spread the carrots in a single layer inside the air fryer basket and cook at 370° for 12 minutes, shaking the basket halfway to turn them.
- Clean the bowl, then whisk together melted butter, honey, and minced garlic in it.
- After 12 minutes, transfer carrots back to the bowl and drizzle the honey garlic butter over them, stirring gently to cover each piece.
- Place the carrots back in the air fryer and cook 6 to 8 more minutes until they are soft in the center and have golden edges. Serve right away.
Notes
- Recipe makes 3 smaller servings or 2 generous servings and may be doubled to serve more people
- For a double recipe, you may need to cook the carrots in batches
- When all batches are done, you can place all batches in the air fryer for 1-2 minutes to heat through
