Description

This air fryer chicken breast asparagus lemon dish is a quick and fresh meal ideal for busy weeknights. It combines simple ingredients for an easy dinner perfect for family dinner occasions. Enjoy a tasty lemon chicken recipe with asparagus dinner flavors.


Ingredients

  • 1 1/2 pounds skinless chicken breast cut into 1-inch cubes
  • Kosher salt to taste
  • 1/2 cup reduced-sodium chicken broth
  • 2 tablespoons reduced-sodium shoyu or soy sauce Coconut aminos for GF W30
  • 2 teaspoons cornstarch arrowroot powder or tapioca starch for whole30
  • 2 tablespoons water
  • 1 tbsp canola or grapeseed oil divided
  • 1 bunch asparagus ends trimmed cut into 2-inch pieces
  • 6 cloves garlic chopped
  • 1 tbsp fresh ginger
  • 3 tablespoons fresh lemon juice
  • fresh black pepper to taste

Instructions

  1. Sprinkle the chicken cubes lightly with salt.
  2. Mix chicken broth and soy sauce in a small bowl.
  3. In another bowl, stir together cornstarch and water until smooth.
  4. Warm a large wok over medium-high heat then pour in 1 teaspoon of oil and sauté asparagus until tender-crisp, about 3 to 4 minutes.
  5. Toss in garlic and ginger and cook until lightly browned, about 1 minute, then set aside.
  6. Turn the heat to high and add 1 teaspoon of oil, cook half the chicken until browned and fully cooked, about 4 minutes per side.
  7. Remove chicken, add remaining oil and cook the rest of the chicken the same way, then set aside.
  8. Pour in the soy sauce mixture, bring it to a boil and cook for about 1 and a half minutes.
  9. Add fresh lemon juice along with the cornstarch blend, stir well, then add chicken and asparagus back to the wok, mix thoroughly, remove from heat, and serve.
