- 2 boneless skinless chicken breasts
- Kosher salt
- Freshly ground black pepper
- 1/3 cup all-purpose flour
- 2 large eggs
- 1 cup panko bread crumbs
- 1/4 cup finely grated Parmesan
- 1 tsp dried oregano
- 1/2 tsp crushed red pepper flakes
- 1/2 tsp garlic powder
- 1 cup store-bought or homemade marinara sauce
- 1 cup shredded mozzarella
- Chopped fresh parsley for serving
Instructions
- Cut the chicken breasts horizontally to make four thin pieces and season both sides with salt and pepper.
- Season the flour with salt and pepper in a bowl, beat the eggs in a second bowl, and mix panko bread crumbs with Parmesan, oregano, red pepper flakes, and garlic powder in a third bowl.
- Coat each chicken piece first in flour, shaking off extras, then dip into eggs removing excess, and finally press into the panko mixture ensuring full coverage.
- Arrange the chicken in a single layer inside the air fryer basket and cook at 400 degrees Fahrenheit for about 5 minutes on each side until cooked through.
- Add marinara sauce and mozzarella on top of the chicken and continue cooking at 400 degrees for about 3 more minutes until the cheese melts and turns golden.
