Description
This quick and easy air fryer chicken sausage and veggies recipe is perfect for lazy days. Loaded with protein and colorful vegetables, it is a delicious and healthy air fryer meal you can enjoy any day of the week.

- 1 large red bell pepper – cut into 1-inch pieces
- 1 large orange bell pepper – cut into 1-inch pieces
- 1 red onion – peeled and cut into 1-inch pieces
- 1 medium zucchini – cut into 1-inch pieces
- 1 tablespoon avocado oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt
- pinch of black pepper
- 1 package chicken sausage (12 oz) – I used a robust Italian flavor
Instructions
- Chop the veggies and add them to a large bowl then drizzle with olive oil and toss to coat.
- In a smaller bowl, mix the garlic powder onion powder Italian seasoning kosher salt and black pepper then add the spice blend to the veggies and toss to coat.
- Slice the sausage into 3/4 inch rounds and add to the bowl with the veggies and toss everything together.
- Preheat the air fryer to 390 degrees F if needed and spray the basket with cooking spray.
- Add the veggies and sausage in an even layer to the air fryer basket and cook for 10 minutes flipping halfway through.
- Remove from the air fryer and serve as is or with cooked cauliflower rice or brown rice.
Notes
- Buy good quality chicken sausage
- You can also use kielbasa’s
- Chop the veggies into even sizes (1-inch pieces) so they cook evenly
- Toss everything in the air fryer basket at least once during the cooking time to ensure it all gets nice and golden and crispy
- You can store this chicken sausage and veggies in an airtight container in the refrigerator for up to 4 days
- Easily reheat in the air fryer at 350 degrees F for a few minutes
