- 1 lb boneless skinless chicken thighs cut to 1 inch (2-cm) pieces
- 1 tablespoon vegetable oil
- 1/2 teaspoon salt
- 1/3 cup cornstarch
- 2 tablespoons ketchup
- 2 tablespoons Shaoxing wine or dry sherry
- 2 tablespoons rice vinegar
- 2 tablespoons light soy sauce or soy sauce
- 3 tablespoons brown sugar
- 2 tablespoons water
- 2 teaspoons cornstarch
- 1 tablespoon peanut oil or vegetable oil
- 2 cloves garlic minced
- 2 teaspoons minced ginger
- 1/2 small white onion chopped
- 1 bell pepper chopped (I used a mix of colors in this recipe)
Instructions
- In a large bowl, mix the chicken pieces with vegetable oil and salt and allow them to marinate for about 10 minutes.
- Coat the marinated chicken pieces with cornstarch, making sure some dry cornstarch remains visible.
- Arrange the chicken in the air fryer basket in a single layer, avoiding overlap. Spray the chicken lightly with oil to cover dry areas.
- Air fry the chicken at 450°F (230°C) for 8 minutes until the chicken changes to a pale yellow color.
- Turn or shake the chicken and continue cooking for another 5 to 6 minutes until golden brown. Transfer the cooked chicken to a plate to cool slightly.
- Combine all the sauce ingredients in a small bowl and mix well.
- Heat the peanut oil in a large skillet until hot and add the garlic and ginger, cooking and stirring briefly until fragrant.
- Add the bell pepper and chopped onion to the skillet and cook for 30 seconds while stirring.
- Stir the sauce mixture again to dissolve the cornstarch fully and pour it into the skillet. Cook while stirring until the sauce thickens.
- Add the chicken back into the skillet and toss well to coat with the thickened sauce. Serve immediately while hot.
Notes
- I highly recommend using chicken thigh for this dish so the meat remains juicy after air frying
- Air frying cooks the inside of the chicken quite fast and chicken breast can end up a bit dry if you’re not careful
- However, if you decide to use chicken breast, reducing the air frying time by 3 to 4 minutes will help
