Description

This Air Fryer Eggplant Parmesan is an easy dinner perfect for weeknight meals. Enjoy crispy eggplant coated in breaded layers, paired with melted cheese and savory marinara sauce, making it ideal for family dinner.


Ingredients

  • 1 eggplant
  • 1 egg whisked
  • 1/4 cup Italian breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Slice the eggplant into 1/4 inch thick pieces and sprinkle salt over them, letting them rest for at least 15 minutes.
  2. Heat the air fryer to 370 degrees F.
  3. Beat the egg in a shallow bowl and in another bowl mix together the breadcrumbs, Parmesan cheese, garlic powder, and basil.
  4. Dip each eggplant slice first into the egg wash then into the breadcrumb mixture, coating completely.
  5. Arrange the coated slices in a single layer in the air fryer basket without overlapping and cook for 8 to 10 minutes, spraying oil and flipping halfway through.
  6. Spoon a small amount of marinara sauce onto each slice, then sprinkle with mozzarella cheese.
  7. Close the air fryer for 1 minute to melt the cheese, then turn off the air fryer and let the slices sit for an additional minute to finish melting.
