Description
These baked feta eggs are a delicious and healthy baked egg dish featuring fresh vegetables and creamy feta cheese. Perfect for a savory breakfast or brunch, this family friendly breakfast combines Mediterranean flavors with a one dish breakfast ease.
Ingredients

- 2 cups cherry or grape tomatoes
- 1 red bell pepper diced
- ½ small red onion diced
- 3 cloves minced garlic
- 8 ounces feta cheese
- 4 tablespoons olive oil
- 1 teaspoons dried oregano
- 1 teaspoons sea salt
- ½ teaspoon dried thyme
- ½ teaspoon ground black pepper
- ½ teaspoon red pepper flakes
- 1 cup chopped baby spinach
- 4 large eggs
- Optional for topping – chopped fresh basil or fresh chives
Instructions
- Preheat oven to 400 degrees F.
- Divide tomatoes bell pepper red onion garlic and feta cheese between 4 oven safe dishes if using ramekins or combine in one large dish placing feta in the center. Drizzle olive oil over veggies and feta.
- Stir dried oregano salt dried thyme black pepper and red pepper flakes in a small bowl and sprinkle over the feta and vegetables.
- Place dishes in oven and bake for 25 minutes.
- Remove dishes from oven stir to combine feta with veggies then add spinach and stir.
- Create wells in the mixture crack eggs into wells.
- Return to oven and bake for 10 more minutes.
- Top with optional fresh herbs or chives and serve with bread for dipping.
Notes
- *Ramekins should hold at least 10 ounces or more
- **If using one baking dish I recommend using an 8×8 or 9×11 baking pan
