- 4 boneless skinless chicken breast halves
- 1/2 cup refrigerated basil pesto
- 1 cup mozzarella cheese shredded
- 3 plum tomatoes sliced optional
Instructions
- Warm your oven to 400°F.
- Spray a foil-lined baking sheet with cooking spray.
- Toss the chicken breasts in the basil pesto until fully coated.
- Arrange the pesto-coated chicken on the prepared baking sheet.
- Bake the chicken for 35 minutes or until it is thoroughly cooked.
- Take the chicken out of the oven and add the sliced tomatoes and shredded mozzarella on top.
- Return to the oven and bake for another 5 to 7 minutes until the cheese melts completely.
- Serve the chicken while warm and enjoy your meal.
