Description

This beef pepper rice bowl is a delicious and easy recipe perfect for meal prep with peppers. It’s one of the easy healthy recipes with ground beef, combining bold flavors for a satisfying protein bowl. Ideal for quick dinners and high protein meals.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 bell peppers any color sliced
  • 3 cloves garlic minced
  • 1 cup uncooked jasmine rice
  • 2 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon ground black pepper
  • 1 teaspoon paprika
  • Salt to taste
  • Chopped green onions for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, sauté until softened.
  2. Add ground beef to the skillet and cook until browned. Drain excess fat if necessary.
  3. Stir in sliced bell peppers, ground black pepper, paprika, and salt. Cook for another 5 minutes until peppers soften.
  4. Add uncooked jasmine rice, beef broth, soy sauce, and Worcestershire sauce to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is cooked and liquid is absorbed.
  5. Remove from heat and let stand covered for 5 minutes. Fluff rice and beef mixture with a fork.
  6. Garnish with chopped green onions and serve warm.

Notes

  • For extra flavor, add a pinch of crushed red pepper flakes or a splash of sesame oil before serving
