Description

Best Cheesy Potato Casserole is a simple and comforting family dinner perfect for busy weeknights. This cheesy potato bake combines easy ingredients for a delicious weeknight meal that everyone will enjoy.


Ingredients

  • 3 tablespoons butter
  • 1 cup yellow onion diced into ½ inch pieces
  • 20 ounces frozen shredded potatoes
  • 1 10-ounce can cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheese (divided)
  • 2 teaspoons garlic salt
  • 1 cup chicken broth

Instructions

  1. Warm the oven to 350 degrees and prepare a 9 inch by 13 inch baking dish with nonstick spray.
  2. Melt butter in a skillet over medium heat then cook the diced onion until it softens and turns golden, about 5 minutes.
  3. In a large bowl, mix together the shredded potatoes, cream of mushroom soup, sour cream, 1½ cups cheese, cooked onions, garlic salt, and chicken broth until combined.
  4. Spread the mixture evenly in the baking dish and top with the remaining ½ cup cheese.
  5. Bake uncovered for 30 to 40 minutes until the edges are bubbling and the top turns lightly golden. Remove and serve warm.
