- 28 ounces frozen fries
- 1 1/2 cup shredded cheese – queso quesadilla Oxaca or Monterey Jack
- 1 1/2 cups birria liquid drained
- 1/4 cup diced white onion
- 1/4 cup cilantro
- Guacamole (optional)
- Sour cream (optional)
Instructions
- Cook the fries following the package guidelines until crispy and golden.
- While the fries bake, warm the birria gently in a small pan over medium-low heat and lower the heat if it starts boiling.
- Arrange the cooked fries on a baking tray or serving plate.
- Sprinkle half of the shredded cheese over the fries then add the heated birria, finishing with the rest of the cheese.
- Scatter the diced white onion and cilantro on top.
- Add guacamole and sour cream if you like, and serve the dish warm alongside some consomé.
