Description

These Buffalo Chicken Bowls combine tender chicken tossed in zesty buffalo sauce with fresh vegetables over rice for a flavorful meal. Perfect for quick dinners and meal prep, they bring a spicy and satisfying twist to your table.

  • 1 pound boneless skinless chicken breasts cut into bite-sized pieces
  • 1⁄2 cup hot sauce such as Frank’s RedHot
  • 1⁄4 cup unsalted butter melted
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cups cooked rice white or brown
  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes halved
  • 1⁄2 cup shredded cheddar cheese
  • 1⁄4 cup ranch or blue cheese dressing
  • 1⁄4 cup thinly sliced green onions
  • Optional sliced avocado for topping

Instructions

  1. Whisk together the hot sauce and melted butter in a small bowl and set it aside.
  2. Warm the olive oil in a large pan over medium-high heat and season the chicken pieces with salt and pepper before adding them to the skillet.
  3. Cook the chicken until it is browned and fully cooked, about 5 to 7 minutes.
  4. Lower the heat and pour the prepared buffalo sauce over the chicken, stirring well to coat, then let it simmer gently for 3 to 5 minutes to soak in the flavors.
  5. Assemble the bowls by placing cooked rice at the bottom.
  6. Distribute the buffalo chicken evenly on top of the rice.
  7. Add shredded lettuce and halved cherry tomatoes over the chicken.
  8. Sprinkle cheddar cheese and drizzle ranch or blue cheese dressing over each bowl.
  9. Garnish with thinly sliced green onions and add avocado slices if you like.
  10. Serve immediately while the chicken is warm and enjoy the vibrant flavors.
