  • 2 cups cooked chicken breast shredded
  • 1/3 cup buffalo sauce
  • 1 tablespoon butter melted
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled blue cheese or ranch dressing
  • 1/2 cup celery diced
  • 1/4 cup red onion diced
  • 1 tablespoon fresh parsley chopped
  • 1 head butter lettuce or romaine separated into leaves

Instructions

  1. Warm buffalo sauce, melted butter, garlic powder, smoked paprika, salt, and black pepper together in a medium saucepan over low heat until well blended.
  2. Stir in the shredded chicken to coat it thoroughly with the sauce and allow it to simmer gently for 2 to 3 minutes.
  3. Take the saucepan off the heat and let the chicken mixture cool down slightly.
  4. Arrange the lettuce leaves on a flat surface and spoon about 2 to 3 tablespoons of the chicken mixture onto each leaf.
  5. Add diced celery, red onion, blue cheese crumbles, and sprinkle fresh parsley over each.
  6. Fold the lettuce leaves around the filling and serve immediately while fresh.
