- 4 cups chopped green cabbage
- 2 medium carrots quartered and sliced
- 4 cups low-sodium beef broth
- 3 8 oz cans tomato sauce
- 1/2 cup white rice uncooked
- 1 bay leaf
- 3 tbsp light brown sugar
- 2 tbsp fresh chopped parsley
Instructions
- Warm the vegetable oil in a large pot over medium-high heat and brown the ground beef seasoned with salt and pepper.
- Add the chopped onion and minced garlic, cooking until the onions soften.
- Stir in the cabbage, carrots, tomato sauce, beef broth, uncooked rice, bay leaf, and brown sugar, combining everything evenly.
- Let the soup simmer for about 25 minutes until the rice is fully cooked.
- Take out the bay leaf and sprinkle the chopped parsley on top before serving.
