Instructions

  2. Prepare Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
  3. Bake Sweet Potatoes: Place the baking sheet in the oven and roast the sweet potatoes for about 20-25 minutes or until tender and slightly caramelized.
  4. Season Chicken: While the sweet potatoes are roasting, rub the chicken breasts with 1 tablespoon of olive oil and then coat evenly with Cajun seasoning.
