Description

Cheesy Chicken Broccoli and Rice Casserole is a perfect easy dinner that comes together quickly for busy weeknights. This family dinner features tender chicken, broccoli rice, and a delicious cheesy topping everyone will enjoy.


Ingredients

Scale
  • 2 cups of diced rotisserie chicken or any other cooked chicken
  • 2 cups broccoli florets broken down into bite-sized pieces
  • 1 can cream of chicken soup can use low-sodium or Healthy Request
  • 2 cups cooked rice
  • 1 1/2 cups shredded cheese
  • 1/2 cup mayonnaise
  • 1/23/4 cup crushed corn flakes
  • 2 tbsp butter melted

Instructions

  1. Heat the oven to 350°F.
  2. In a greased 9×13 baking dish, combine the chicken, broccoli, soup, cooked rice, cheese, and mayonnaise.
  3. Spread the crushed corn flakes evenly over the top of the mixture.
  4. Pour the melted butter across the corn flakes.
  5. Bake for 30 to 35 minutes or until the casserole is hot and bubbly.

Notes

  • Using Frozen Broccoli? Fresh broccoli is recommended but frozen broccoli can be used if thawed first
