Cheesy Chicken Broccoli and Rice Casserole is a perfect easy dinner that comes together quickly for busy weeknights. This family dinner features tender chicken, broccoli rice, and a delicious cheesy topping everyone will enjoy.

- 2 cups of diced rotisserie chicken or any other cooked chicken
- 2 cups broccoli florets broken down into bite-sized pieces
- 1 can cream of chicken soup can use low-sodium or Healthy Request
- 2 cups cooked rice
- 1 1/2 cups shredded cheese
- 1/2 cup mayonnaise
- 1/2–3/4 cup crushed corn flakes
- 2 tbsp butter melted
Instructions
- Heat the oven to 350°F.
- In a greased 9×13 baking dish, combine the chicken, broccoli, soup, cooked rice, cheese, and mayonnaise.
- Spread the crushed corn flakes evenly over the top of the mixture.
- Pour the melted butter across the corn flakes.
- Bake for 30 to 35 minutes or until the casserole is hot and bubbly.
Notes
- Using Frozen Broccoli? Fresh broccoli is recommended but frozen broccoli can be used if thawed first
