Description

This cheesy garlic butter mushroom stuffed chicken is an easy and delicious meal that combines tender chicken breasts with a savory mushroom and cheese filling, perfect for a comforting dinner any night of the week.


Ingredients

  • 1 pound cremini mushrooms finely chopped
  • 2 cloves garlic minced
  • 1/4 cup butter
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 4 boneless skinless chicken breasts
  • 1/4 cup butter melted
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large skillet, melt butter over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
  2. Add the chopped cremini mushrooms and cook for 10-15 minutes or until softened and browned.
  3. Stir in Parmesan cheese, chopped parsley, salt, and pepper. Set aside to cool.
  4. Pound the chicken breasts to an even thickness if necessary.
  5. Cut a slit lengthwise in each chicken breast, creating a pocket.
  6. Fill the pockets with the mushroom stuffing. Secure the openings with toothpicks.
  7. In a large skillet, melt butter over medium-high heat.
  8. Season the stuffed chicken breasts with salt and pepper.
  9. Place the chicken breasts in the skillet and cook for 5-7 minutes per side or until cooked through.
  10. Sprinkle the cooked chicken breasts with Parmesan cheese.
  11. Serve the stuffed chicken breasts immediately with your favorite sides, such as roasted vegetables or mashed potatoes.
