Description

Ingredients

  • 2 tbsp olive oil
  • 1 large yellow onion diced
  • 3 large carrots sliced
  • 2 celery stalks sliced
  • 3 garlic cloves minced
  • 6 cups 1.4 l 48 fl oz sodium-reduced chicken broth
  • 2 tsp better than bouillon base chicken flavor optional
  • 1 1/2 lb 700 g boneless skinless chicken breast trimmed of excess fat
  • 8 oz 225 g egg noodles
  • 1 tsp salt or to taste
  • 1 tsp ground black pepper or to taste

Instructions

  1. Sauté vegetables in olive oil over medium heat until onions are translucent and fragrant about 5 minutes.
  2. Add chicken broth and better than bouillon base and stir to combine.
  3. Add chicken breast and season with salt and pepper cover and bring to a boil then reduce heat and simmer for 30 minutes.
  4. Shred the cooked chicken into bite-sized pieces.
  5. Bring soup to a boil add egg noodles and cook until al dente.
  6. Return shredded chicken to pot and adjust seasoning.
  7. Serve hot with optional garnish.
