- 2 tbsp olive oil
- 1 large yellow onion diced
- 3 large carrots sliced
- 2 celery stalks sliced
- 3 garlic cloves minced
- 6 cups 1.4 l 48 fl oz sodium-reduced chicken broth
- 2 tsp better than bouillon base chicken flavor optional
- 1 1/2 lb 700 g boneless skinless chicken breast trimmed of excess fat
- 8 oz 225 g egg noodles
- 1 tsp salt or to taste
- 1 tsp ground black pepper or to taste
Instructions
- Sauté vegetables in olive oil over medium heat until onions are translucent and fragrant about 5 minutes.
- Add chicken broth and better than bouillon base and stir to combine.
- Add chicken breast and season with salt and pepper cover and bring to a boil then reduce heat and simmer for 30 minutes.
- Shred the cooked chicken into bite-sized pieces.
- Bring soup to a boil add egg noodles and cook until al dente.
- Return shredded chicken to pot and adjust seasoning.
- Serve hot with optional garnish.
