Description

Enjoy a creamy and cheesy Chick Fil A Mac and Cheese made with a blend of five cheeses and tender macaroni. This easy homemade copycat recipe is perfect for family dinners that crave rich, gooey comfort food.


Ingredients

  • 12 oz 340 g dry macaroni pasta
  • 1 tsp salt
  • 3 tbsp butter
  • 3 tbsp butter
  • 5 tbsp all-purpose flour
  • 2 1/2 cups 600 ml 20 fl oz milk
  • 1 cup 240 ml 8 fl oz half and half
  • 10 slices American cheese
  • 1 cup sharp 120 g 4 oz sharp orange cheddar freshly grated
  • 1 cup 120 g 4 oz white cheddar freshly grated
  • 1/2 cup 60 g 2 oz Romano cheese freshly grated
  • 1/2 cup 45 g 1.6 oz parmesan cheese freshly grated
  • 1 tsp salt or to taste
  • 1/2 tsp ground black pepper or to taste
  • 1/2 cup 60 g 2 oz grated orange cheddar
  • 1/2 cup 60 g 2 oz grated white cheddar

Instructions

  1. Heat your oven to 350°F 180°C gas mark 4.
  2. Boil the macaroni with 1 teaspoon salt for 8 to 9 minutes, making it slightly under the package directions for al dente. Drain and mix in 3 tablespoons butter until it melts to keep the pasta from sticking.
  3. In a large shallow pot over medium heat, melt the other 3 tablespoons butter and whisk in 5 tablespoons flour. Stir constantly for 1 minute.
  4. Slowly add the milk and half and half while whisking continuously, cooking for 5 to 8 minutes until the sauce thickens.
  5. Take the pot off the heat, stir in all the cheeses until melted and the sauce is smooth, returning to low heat if needed. Season with salt and pepper to taste.
  6. Mix the cooked pasta into the cheese sauce until evenly coated.
  7. Pour into your baking dish or oven-safe pot, top with remaining grated cheese, and bake for 15 minutes until bubbly and cheese is melted.
  8. For a browned crust, broil the casserole for 2 to 3 minutes.
  9. Allow to cool for about 10 minutes before serving. Optionally garnish with black pepper and fresh parsley. Enjoy!

Notes

  • I prefer making and baking this casserole in a shallow cast-iron pot to minimize cleanup
  • Alternatively, use a greased 9 x 13 inch casserole dish if not oven-safe cookware is available
