- 1 pound Chicken Breast boneless and skinless
- ½ teaspoon Salt
- ½ teaspoon Garlic Powder
- ¼ teaspoon Onion Powder
- ¼ teaspoon Dried Thyme
- ¼ teaspoon Black Pepper plus extra for garnish if desired
- 1 tablespoon Olive Oil
- 3½ cup Chicken Broth divided (½ cup to cook the chicken and 3 cups for the gravy)
- 4 tablespoons Butter
- ¼ cup All Purpose Flour
- Chopped parsley or sliced green onions or chopped chives or sprinkle of paprika or extra black pepper for garnish optional
Instructions
- Add salt, garlic powder, onion powder, dried thyme, and black pepper to a bowl and stir to combine. Season both sides of the chicken with the mix.
- Heat olive oil in a large deep skillet over medium heat until hot but not smoking.
- Add chicken and cook for 3 minutes.
- Turn chicken and cook for 2 more minutes until browned.
- Carefully add ½ cup chicken broth to skillet and bring to simmer, cover and lower heat to medium-low.
- Cook chicken for 8-12 minutes until cooked through.
- Remove chicken from skillet and place on plate to cool.
- Without wiping skillet, add butter over medium heat and melt until foamy.
- Add flour and stir to combine, cook for 1-2 minutes stirring constantly.
- Slowly add chicken broth while stirring briskly until gravy is smooth.
- Simmer gravy covered on medium-low heat for approximately 8 minutes, stir occasionally.
- Shred cooled chicken adding any collected juices to gravy.
- Add shredded chicken to gravy and cook 5 minutes on low heat to combine flavors.
- Serve with mashed potatoes or preferred sides and garnish with herbs and pepper if desired.
