- 1/2 cup butter
- 4 cups rotisserie chicken meat shredded
- 1 (15 ounce) bag frozen mixed vegetables
- 1 (11.36 ounce) package Cheddar bay biscuit mix (such as Red Lobster Cheddar Bay Biscuit Mix)
- 2 cups milk
- 1 (10.5 ounce) can cream of chicken soup
- 2 cups chicken stock
- 2 tablespoons fresh chopped parsley (optional)
Instructions
- Preheat your oven according to the biscuit mix instructions.
- In a large skillet, melt 1/2 cup butter over medium heat.
- Add shredded chicken and frozen mixed vegetables; cook until heated through.
- Stir in cream of chicken soup, chicken stock, and milk; simmer until slightly thickened.
- Transfer mixture to a baking dish.
- Prepare the Cheddar bay biscuit mix as directed and drop biscuit dough over the chicken mixture.
- Bake according to biscuit mix package instructions until biscuits are golden brown.
- Garnish with fresh chopped parsley if desired and serve warm.
