Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 medium carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 8 cups low-sodium chicken broth
  • 2 cups cooked chicken shredded
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley chopped

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté onion carrots and celery for 5-6 minutes until softened.
  2. Stir in garlic and dried thyme and cook for 1 minute until fragrant.
  3. Pour in chicken broth and bring to a boil then reduce heat and simmer for 15 minutes.
