- 1 cup cottage cheese
- 1 cup rolled oats
- 1/2 cup applesauce or 1 small grated apple
- 1 large egg
- 1/2 tsp cinnamon
- 1 tbsp honey or maple syrup optional for added sweetness
- 1/2 tsp baking powder
- Pinch of salt
Instructions
- Set your oven to 350°F 175°C and prepare a mini muffin pan by greasing it or lining it with liners.
- In a large bowl, thoroughly mix cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt until combined.
- Let the batter rest for 5 minutes to allow the oats to soak up moisture.
- Evenly spoon the batter into the muffin pan cups, filling nearly to the top.
- Bake for 18 to 20 minutes until the bites are firm and lightly browned.
- Cool the bites in the pan briefly before transferring to a wire rack to cool fully.
- Serve warm or refrigerate for up to four days.
