Ingredients

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 3 carrots sliced
  • 2 celery stalks sliced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 1/2 cups egg noodles
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion and garlic for 2-3 minutes.
  3. Add carrots and celery and cook for another 5 minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Stir in shredded chicken and dried thyme.
  6. Simmer for 10 minutes.
  7. Add egg noodles and cook for 7-8 minutes or until noodles are tender.
  8. Season with salt and pepper to taste.
