  • 2 boneless skinless chicken breasts
  • ½ cup dill pickle juice
  • 2 eggs
  • ¼ cup milk
  • 1 cup all-purpose flour
  • 2 tablespoons powdered sugar
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon celery salt
  • ½ teaspoon dried basil
  • 1 cup peanut oil for frying
  • 4 hamburger buns buttered and toasted
  • pickle slices for topping

Instructions

  1. Gently flatten the chicken pieces to about ½ inch thickness using a mallet inside a zip top bag.
  2. Slice each chicken breast into two equal parts and soak them in pickle juice for one hour.
  3. Combine eggs and milk in a bowl and whisk together.
  4. In a separate bowl, blend flour, powdered sugar, paprika, salt, black pepper, garlic powder, celery salt, and dried basil.
  5. Heat peanut oil in a skillet until it reaches 350°F.
  6. Dip each chicken piece thoroughly in the egg mixture, then dredge evenly in the seasoned flour.
  7. Cook the chicken in hot oil for 2 minutes per side until golden brown and fully cooked.
  8. Drain the fried chicken on paper towels and assemble sandwiches on toasted buns with pickle slices.
