  • Chicken breast 1 pound boneless and skinless cut into bite-sized pieces
  • Butter 4 tablespoons unsalted is recommended for better flavor control
  • Garlic 4 cloves minced
  • Onion 1 medium diced
  • Heavy cream 1 cup or substitute with coconut milk for a lighter option
  • Chicken broth 1 cup low-sodium preferred
  • Parmesan cheese 1 cup grated
  • Italian seasoning 1 tablespoon
  • Red pepper flakes 1 teaspoon adjust to taste
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package directions until just tender. Reserve 1 cup of pasta water before draining and then set the pasta aside.
  2. Heat 2 tablespoons of butter in a large skillet over medium heat. Add the chicken pieces seasoned with salt and pepper and cook for 6 to 8 minutes until golden and thoroughly cooked. Remove the chicken from the skillet.
  3. To the same skillet, add the remaining butter and sauté the garlic and onion for 3 to 4 minutes until the onion turns translucent and fragrant.
  4. Stir in the heavy cream, chicken broth, Italian seasoning, and red pepper flakes. Allow the sauce to simmer gently for about 5 minutes until it thickens; add reserved pasta water if needed to loosen.
  5. Return chicken and cooked pasta to the skillet, toss everything well to coat in the sauce, and cook for an additional 2 minutes to meld the flavors.
  6. Sprinkle grated Parmesan cheese on top and let it melt before serving. Garnish with fresh parsley if desired.
