- 4 slices of bacon chopped
- 2 tbsp unsalted butter
- 1 onion finely chopped
- 2 garlic cloves minced
- 2 tbsp all-purpose flour
- 3 cups chicken broth
- 3 cups corn kernels (fresh frozen or canned)
- 2 medium potatoes peeled and diced
- 1 cup heavy cream
- 1 cup milk
- Salt and pepper to taste
- 1/4 cup green onions or chives chopped (optional garnish)
Instructions
- Cook the chopped bacon over medium heat until crispy then remove and set aside leaving the fat in the pot.
- Add butter to the bacon fat and sauté the onion until soft and translucent about 5 minutes then add garlic and cook for 1 minute.
- Stir in the flour and cook for 1 to 2 minutes to form a roux.
- Gradually whisk in chicken broth then add corn kernels and diced potatoes.
- Bring to a boil then reduce heat and simmer 15 to 20 minutes until potatoes are tender.
- Stir in heavy cream and milk and simmer 5 to 10 minutes until chowder thickens.
- Season with salt and pepper to taste then serve topped with crispy bacon and optional green onions or chives.
