Description

This creamy marry me salmon is an easy dinner perfect for busy weeknights. It delivers a rich and tender salmon meal in minutes making a simple salmon recipe ideal for family dinners and quick fish dinners.


Ingredients

  • 2 tbsp extra virgin olive oil 30 ml
  • 4 salmon fillets 4 oz or 115 grams each
  • 1 small onion finely chopped
  • 5 cloves garlic roughly chopped
  • 1 tbsp all purpose flour 8 grams
  • 1 tsp dried oregano 1 gram
  • 1/2 tsp dried thyme 0.50 grams
  • 1/2 tsp sweet smoked Spanish paprika 1.25 grams
  • 1/4 tsp crushed red pepper 0.65 grams
  • 1 cup low fat milk 240 ml
  • 3/4 cup vegetable broth 180 ml
  • 1/2 cup chopped sundried tomatoes packed in oil 55 grams
  • 2 tbsp grated Manchego cheese 15 grams
  • 1/4 cup chopped fresh basil 5 grams
  • 2 tsp lemon juice 10 ml
  • sea salt & black pepper
  • lemon wedges & chopped parsley for garnish

Instructions

  1. Warm a large frying pan over medium heat and pour in the olive oil.
  2. While the pan heats, pat the salmon fillets dry with paper towels and season them with salt and black pepper on both sides.
  3. Place the salmon fillets skin side down into the pan in a single layer and cook each side for about 3 minutes until just cooked, then take them out and set aside.
  4. In the same pan, keep the heat medium and add the chopped onion and garlic, stirring frequently until the onions become translucent, about 3 minutes.
  5. Sprinkle in the flour and stir continuously for 2 minutes, then mix in the oregano, thyme, smoked paprika, and crushed red pepper quickly.
  6. Pour in the milk and vegetable broth, stirring gently and letting the sauce thicken and become slightly creamy over the next 5 minutes.
  7. Stir in the chopped sundried tomatoes, grated Manchego cheese, chopped basil, and lemon juice, then return the salmon fillets to the pan, placing them in a single layer again.
  8. Reduce the heat to low and let everything simmer together for 2 to 3 minutes until the salmon is warmed through.
  9. Serve the dish straight from the pan, garnished with lemon wedges and chopped parsley for a fresh finish.
