Description

This Creamy One Pot Chicken Rice and Mushrooms is a simple and flavorful easy dinner perfect for a weeknight meal. Enjoy tender chicken and savory mushrooms in a creamy, one pot chicken recipe that the whole family will love.


Ingredients

  • 4 boneless chicken breasts
  • 2 tablespoons vegetable canola or light olive oil
  • 8 oz cremini mushrooms sliced
  • 1 cup uncooked white rice
  • 3 cloves garlic chopped
  • 2 teaspoons dried oregano
  • 2 1/4 cup chicken stock
  • 1/4 cup heavy cream optional
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Sliced onions for garnish

Instructions

  1. Warm your pan over medium-high heat and coat the chicken breasts with oil before adding them to the pan without extra oil.
  2. Cook the chicken for 3 to 4 minutes on one side until it easily releases from the pan, then flip and cook another 3 to 4 minutes.
  3. Remove the chicken from the pan, leaving it to finish cooking with the rice later.
  4. Add the mushrooms to the hot pan and cook for 4 to 5 minutes without salt until they become browned and caramelized.
  5. Stir in the uncooked rice, garlic, and oregano and cook for 2 to 3 minutes until the garlic aroma develops.
  6. Pour in the chicken stock and cream, then season with salt and pepper.
  7. Place the chicken on top of the rice mixture, lower the heat to medium, and cover the pan.
  8. Let everything cook for 20 to 25 minutes until the liquid is absorbed and the chicken reaches 165 degrees internally.
  9. Garnish with sliced green onions if you like and serve with steamed broccoli or cauliflower.
