- 1 lb sweet Italian sausage
- 2 tablespoons olive oil
- 1 large onion diced
- 3 garlic cloves minced
- 6 cups chicken broth
- 1 cup heavy cream
- 1 1/2 cups ditalini pasta
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes optional
- Salt and pepper to taste
- 4 cups fresh spinach roughly chopped
- 1 cup grated Parmesan cheese plus more for garnish
- Fresh parsley chopped for garnish
Instructions
- Cook the Italian sausage in a large pot over medium heat, breaking it apart until browned then remove it from the pot.
- Heat olive oil in the same pot and cook the diced onion until soft and clear, then add minced garlic and sauté briefly.
- Pour in chicken broth and bring to a boil, then reduce heat to low and add heavy cream, oregano, basil, red pepper flakes, salt, and pepper.
- Stir in ditalini pasta and simmer until pasta is tender but firm, about 8 minutes.
- Add the cooked sausage and chopped spinach to the pot, cooking just until spinach has wilted.
- Remove from heat and mix in the grated Parmesan cheese until melted and combined.
- Ladle soup into bowls and garnish with extra Parmesan and fresh parsley if you like.
