Description
This creamy smothered chicken with rice is a perfect comfort meal, combining tender chicken thighs in a rich sauce served alongside fluffy white rice for an easy and satisfying dinner.

- 2 lbs chicken thighs or chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 small onion diced
- 3 cloves garlic minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon salt adjust to taste
- 1/2 teaspoon black pepper
- 1 teaspoon cornstarch mixed with 1 tablespoon water to thicken if needed
- 1 1/2 cups long-grain white rice
- 3 cups water or chicken broth
Instructions
- Season the chicken with salt black pepper garlic powder onion powder and paprika.
- Heat olive oil in a skillet over medium heat and brown the chicken on both sides.
- Remove chicken and set aside.
- In the same skillet melt butter and sauté onions and garlic until translucent.
- Add chicken broth heavy cream dried thyme dried parsley salt and pepper.
- Return chicken to skillet and simmer until cooked through and sauce thickens. Use cornstarch slurry if needed to thicken sauce.
- Meanwhile cook rice in water or chicken broth until fluffy.
- Serve chicken topped with sauce alongside rice.
Notes
- For extra flavor marinate the chicken for a few hours before cooking
- Use chicken broth in the rice for added richness
- Leftovers store well refrigerated for up to 3 days
