Description

This creamy smothered chicken with rice is a perfect comfort meal, combining tender chicken thighs in a rich sauce served alongside fluffy white rice for an easy and satisfying dinner.


Ingredients

  • 2 lbs chicken thighs or chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 small onion diced
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper
  • 1 teaspoon cornstarch mixed with 1 tablespoon water to thicken if needed
  • 1 1/2 cups long-grain white rice
  • 3 cups water or chicken broth

Instructions

  1. Season the chicken with salt black pepper garlic powder onion powder and paprika.
  2. Heat olive oil in a skillet over medium heat and brown the chicken on both sides.
  3. Remove chicken and set aside.
  4. In the same skillet melt butter and sauté onions and garlic until translucent.
  5. Add chicken broth heavy cream dried thyme dried parsley salt and pepper.
  6. Return chicken to skillet and simmer until cooked through and sauce thickens. Use cornstarch slurry if needed to thicken sauce.
  7. Meanwhile cook rice in water or chicken broth until fluffy.
  8. Serve chicken topped with sauce alongside rice.

Notes

  • For extra flavor marinate the chicken for a few hours before cooking
  • Use chicken broth in the rice for added richness
  • Leftovers store well refrigerated for up to 3 days
