Description

Creamy Tuscan Chicken Orzo is a simple and delicious easy dinner that makes a perfect weeknight meal. This family dinner brings together tender chicken and creamy pasta in one pot for convenience and flavor. Enjoy a rich creamy pasta recipe everyone will love.


Ingredients

  • 2 large boneless skinless chicken breasts or 4 small
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 cup orzo pasta
  • ½ cup sun-dried tomatoes chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach chopped
  • ½ teaspoon red pepper flakes optional
  • 1 tablespoon butter

Instructions

  1. Pat the chicken dry and season both sides evenly with salt pepper garlic powder and Italian seasoning.
  2. Warm olive oil in a large skillet over medium-high heat and cook the chicken for 5 to 6 minutes on each side until golden and cooked through then remove it from the pan.
  3. Lower the heat to medium then add butter to the pan and cook the garlic for about 30 seconds until it becomes aromatic.
  4. Add the orzo and stir for 1 to 2 minutes until it turns lightly golden.
  5. Mix in the sun-dried tomatoes and chicken broth then bring to a gentle simmer.
  6. Cover the skillet and cook the orzo for around 10 minutes stirring occasionally until tender and most liquid is absorbed.
  7. Pour in the heavy cream and Parmesan cheese and stir until the sauce is creamy and smooth.
  8. Fold in the chopped spinach until wilted.
  9. Return the cooked chicken to the skillet and spoon sauce over it then simmer together for 2 minutes to combine flavors.
