- 2 large boneless skinless chicken breasts or 4 small
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 1 cup orzo pasta
- ½ cup sun-dried tomatoes chopped
- 2 cups chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach chopped
- ½ teaspoon red pepper flakes optional
- 1 tablespoon butter
Instructions
- Pat the chicken dry and season both sides evenly with salt pepper garlic powder and Italian seasoning.
- Warm olive oil in a large skillet over medium-high heat and cook the chicken for 5 to 6 minutes on each side until golden and cooked through then remove it from the pan.
- Lower the heat to medium then add butter to the pan and cook the garlic for about 30 seconds until it becomes aromatic.
- Add the orzo and stir for 1 to 2 minutes until it turns lightly golden.
- Mix in the sun-dried tomatoes and chicken broth then bring to a gentle simmer.
- Cover the skillet and cook the orzo for around 10 minutes stirring occasionally until tender and most liquid is absorbed.
- Pour in the heavy cream and Parmesan cheese and stir until the sauce is creamy and smooth.
- Fold in the chopped spinach until wilted.
- Return the cooked chicken to the skillet and spoon sauce over it then simmer together for 2 minutes to combine flavors.
