- ½ teaspoon freshly ground black pepper
- 1 tablespoon extra-virgin olive oil
- ½ white onion diced
- ½ cup sun-dried tomatoes in oil
- ½ cup cherry tomatoes
- 1 tablespoon minced garlic
- 1 cup heavy cream
- ½ cup freshly shredded Parmesan cheese
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1 cup fresh baby spinach
- Salt to taste
Instructions
- Season the salmon filets with kosher salt and freshly ground black pepper.
- Heat extra-virgin olive oil in a skillet over medium heat and cook salmon until golden and cooked through, then set aside.
- In the same skillet, add diced white onion and cook until translucent.
- Add sun-dried tomatoes, cherry tomatoes, and minced garlic; cook for a few minutes until fragrant.
- Pour in heavy cream, then stir in freshly shredded Parmesan cheese, paprika, and Italian seasoning.
- Add fresh baby spinach and cook until wilted.
- Season the sauce with salt to taste.
- Return salmon to the skillet, spoon sauce over, and simmer for 2-3 minutes. Serve warm.
