Instructions
- Heat your oven to 425°F or 220°C and put a baking sheet in to warm.
- If you choose, peel the sweet potatoes and slice them into fries about ¼ inch thick, ensuring they are evenly cut.
- Soak the fries in cold water for 30 minutes to eliminate excess starch for better crispiness.
- Drain and dry the fries completely using paper towels, then toss them with olive oil, garlic powder, paprika, salt, black pepper, and cornstarch if using.
- Take the hot baking sheet from the oven and arrange the fries in a single layer without overcrowding.
- Bake the fries for 25 to 30 minutes, turning them halfway through until they turn crispy and golden.
- After baking, allow the fries to cool slightly before serving.

- If you would like your fries extra crispy, adding cornstarch before baking creates a light coating that absorbs moisture and crisps the exterior while keeping inside soft
