- 1 lb boneless skinless chicken breasts
- 6 cups chicken broth
- 2 carrots sliced
- 2 celery stalks sliced
- 1 onion diced
- 2 garlic cloves minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- 2 cups egg noodles
- Fresh parsley for garnish
Instructions
- Place chicken breasts, chicken broth, carrots, celery, onion, garlic, dried thyme, dried parsley, salt, and pepper into the crockpot.
- Cook on low for 6 to 8 hours or on high for 3 to 4 hours until chicken is tender.
- Remove chicken and shred with two forks.
- Add egg noodles to the crockpot and cook for an additional 15 minutes until noodles are tender.
- Return shredded chicken to the pot and stir to combine.
- Garnish with fresh parsley and serve hot.
Notes
- You can substitute egg noodles with any pasta of your choice or gluten-free noodles if preferred
- For a thicker soup, add a cornstarch slurry towards the end of cooking
