- 4 large eggs
- 2 tablespoons butter
- 4 slices cheddar cheese
- 4 slices cooked bacon
- 1⁄4 cup spinach
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
Instructions
- Heat your oven to 350°F 175°C and place the croissants cut side up on a baking sheet.
- Toast the croissants in the oven for about 5 to 7 minutes until slightly browned.
- While warming the croissants, melt two tablespoons of butter in a skillet over medium heat.
- Whisk the eggs thoroughly in a bowl until well blended.
- Pour the eggs into the hot buttered skillet and stir occasionally as they cook gently for 3 to 4 minutes until scrambled.
- Add salt and pepper to the eggs and mix evenly then remove the skillet from heat.
- Slice each croissant horizontally to create sandwich halves.
- Layer cheddar cheese on the bottom halves followed by bacon slices and scrambled eggs.
- Top with fresh spinach and cover with the croissant tops.
- Serve the sandwiches warm while the cheese remains melted.
