Description

A refreshing and healthy summer salad combining crisp cucumber, ripe cherry tomatoes, fresh mozzarella, and a flavorful herb marinade. Perfect for a light meal or side dish.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • Pinch salt
  • Pinch pepper
  • 1 cucumber peeled fork-scored and thinly sliced then diced
  • 1½ cups cherry tomatoes cut into quarters
  • 8 oz fresh mozzarella
  • ½ large red onion chopped into small pieces
  • fresh basil leaves

Instructions

  1. In a bowl combine olive oil balsamic vinegar dried oregano dried basil salt and pepper to make the marinade.
  2. Toss diced cucumber cherry tomatoes mozzarella red onion and basil leaves with the marinade.
  3. Chill for 15 minutes before serving to let flavors meld.
  4. Serve cold as a refreshing salad.

Notes

  • Use fresh mozzarella for best flavor
  • You can substitute dried herbs with fresh ones if preferred
