Description
A refreshing and healthy summer salad combining crisp cucumber, ripe cherry tomatoes, fresh mozzarella, and a flavorful herb marinade. Perfect for a light meal or side dish.
Ingredients

- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- Pinch salt
- Pinch pepper
- 1 cucumber peeled fork-scored and thinly sliced then diced
- 1½ cups cherry tomatoes cut into quarters
- 8 oz fresh mozzarella
- ½ large red onion chopped into small pieces
- fresh basil leaves
Instructions
- In a bowl combine olive oil balsamic vinegar dried oregano dried basil salt and pepper to make the marinade.
- Toss diced cucumber cherry tomatoes mozzarella red onion and basil leaves with the marinade.
- Chill for 15 minutes before serving to let flavors meld.
- Serve cold as a refreshing salad.

- Use fresh mozzarella for best flavor
- You can substitute dried herbs with fresh ones if preferred
