- 3 tsp Chinese chili oil
- 1 tsp sesame oil
- 3 tsp salt
Instructions
- Gather everything you need for the salad.
- In a mixing bowl, combine sugar, sesame seeds, crushed garlic, and chopped green onion.
- Add soy sauce, rice vinegar, chili oil, and sesame oil to the bowl and mix well, then let it rest.
- Trim the ends off each cucumber and place them between chopsticks to prevent cutting through.
- Make angled cuts along the cucumbers to form spirals, then turn and cut perpendicularly to complete the pattern.
- Lay the cucumber spirals in a bowl, sprinkle with salt, and gently massage them. Allow to sit for 8 to 10 minutes.
- Rinse the salted cucumbers with cold water to remove excess salt.
- Pour the prepared marinade over the cucumbers and toss until fully coated. Serve and enjoy.
