- 2 tablespoons extra virgin olive oil
- 1 medium yellow onion chopped
- 3 cloves garlic minced
- 1 medium head green cabbage cored and chopped
- 2 sticks celery chopped
- 2 medium carrots sliced into thin rounds
- 1/2–3/4 teaspoon kosher salt
- 1/2–3/4 teaspoon black pepper
- 1/2 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2–1 teaspoon Aleppo pepper or red pepper flakes
- 1 28-ounce can diced tomatoes with juices
- 3 cups low sodium vegetable broth
- 1 cup fresh parsley chopped
- 3 stalks green onions trimmed and sliced
- 1 inch piece fresh ginger peeled and finely grated
- 1 large lemon zested and juiced
Instructions
- Heat the olive oil in a large Dutch oven or cooking pot until shimmering. Add the onion and garlic and cook until fragrant.
- Add the cabbage, celery, carrots, kosher salt, and black pepper. Cook until vegetables have softened somewhat, about 5–7 minutes.
- Add the turmeric, cumin, coriander, and Aleppo pepper and toss to coat the vegetables.
- Add the diced tomatoes with their juices and the vegetable broth. Bring to a boil for 5 minutes, then reduce heat to medium-low.
- Cover partway and simmer for 20–25 minutes until vegetables are tender.
- Turn off the heat and stir in parsley, green onions, ginger, lemon zest, and lemon juice. Serve immediately.
