- 6 tbsp coconut yogurt
- 1 tbsp blue spirulina
- 4 tbsp maple syrup
- 2 tbsp Greek style vegan yogurt
- ½ tsp matcha powder
Instructions
- Place all chia seeds, nut milk, coconut milk, coconut yogurt, blue spirulina, and maple syrup in a bowl and whisk well until everything is smooth and mixed evenly.
- Allow the mixture to rest for 5 minutes to thicken, then whisk again thoroughly to eliminate any lumps.
- Pour the prepared pudding into containers or individual servings, cover them, and refrigerate for at least 2 hours to set.
- When ready to serve, remove the pudding from the fridge and scoop some into a small bowl.
- In another bowl, combine Greek style vegan yogurt and matcha powder, then spoon small amounts on top of the pudding to create shapes resembling continents. Enjoy your earth-themed chia pudding!
