- 5 Persian cucumbers
- 1/2 tsp salt
- 1/2 tbsp sesame oil
- 3/4 tbsp light soy sauce
- 1/2–1 tbsp sugar see notes
- 3/4 tbsp rice vinegar
- 1 tbsp chili oil
- 1/2 tbsp sesame seeds
- 1/2 tbsp garlic minced optional
Instructions
- Cut one end of a cucumber diagonally to create oval shaped slices; continue slicing the rest similarly according to your preferred thickness.
- Place the cucumber slices in a bowl and sprinkle with half a teaspoon of salt, toss well, then refrigerate for at least 20 minutes to allow moisture to draw out.
- After chilling, drain the liquid and rinse the cucumbers quickly under cold water for about 10 seconds before returning them to the bowl.
- Add sesame oil, light soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and optional minced garlic to the cucumbers.
- Mix thoroughly until all ingredients are evenly combined and serve immediately.

- Sugar: Begin with 1/2 tbsp and adjust to taste based on your chili oil and preference
- Garlic: Optional but recommended according to taste
- Chili oil: Adjust amount depending on desired heat level
