Description

This easy low carb chicken casserole is a delicious and satisfying dinner option packed with protein and flavor. Perfect for busy weeknights, it combines chicken, bacon, and broccoli or spinach with cheesy ranch goodness.


Ingredients

  • 4 cups diced or shredded cooked chicken breast
  • 8 slices cooked and chopped bacon
  • 5 cups broccoli florets OR 1 pound thawed frozen spinach well-drained
  • 3 cloves minced garlic
  • 1 cup ranch dressing
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 13 teaspoons ranch seasoning mix for added flavor

Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a large bowl, combine chicken, bacon, broccoli or spinach, garlic, ranch dressing, 1/2 cup mozzarella cheese, and 1/2 cup cheddar cheese.
  3. Transfer the mixture to a greased casserole dish.
  4. Sprinkle the topping cheeses evenly over the casserole.
  5. Bake uncovered for 15-20 minutes or until bubbly and cheese is melted.
  6. Remove from oven and let cool slightly before serving.

Notes

  • For added flavor, you can mix in 1-3 teaspoons ranch seasoning mix
  • Use either fresh broccoli or well-drained thawed frozen spinach as preferred
