This easy low carb chicken casserole is a delicious and satisfying dinner option packed with protein and flavor. Perfect for busy weeknights, it combines chicken, bacon, and broccoli or spinach with cheesy ranch goodness.

- 4 cups diced or shredded cooked chicken breast
- 8 slices cooked and chopped bacon
- 5 cups broccoli florets OR 1 pound thawed frozen spinach well-drained
- 3 cloves minced garlic
- 1 cup ranch dressing
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1–3 teaspoons ranch seasoning mix for added flavor
Instructions
- Preheat your oven to 350 degrees F.
- In a large bowl, combine chicken, bacon, broccoli or spinach, garlic, ranch dressing, 1/2 cup mozzarella cheese, and 1/2 cup cheddar cheese.
- Transfer the mixture to a greased casserole dish.
- Sprinkle the topping cheeses evenly over the casserole.
- Bake uncovered for 15-20 minutes or until bubbly and cheese is melted.
- Remove from oven and let cool slightly before serving.
Notes
- For added flavor, you can mix in 1-3 teaspoons ranch seasoning mix
- Use either fresh broccoli or well-drained thawed frozen spinach as preferred
