These Easy Slow Cooker Chicken Fajitas are the perfect weeknight meal with tender chicken, crisp peppers, and a simple fajita seasoning. Just set and forget!

- 2 lbs boneless skinless chicken breasts or thighs cut into strips
- 1 large onion sliced
- 2 large bell peppers sliced use a mix of red green or yellow
- 1 packet fajita seasoning or homemade blend
- 1/2 cup chicken broth or water
- 1 tbsp olive oil
- 1 tbsp lime juice freshly squeezed
Instructions
- Place the chicken strips at the bottom of the slow cooker.
- Add the sliced onion and bell peppers over the chicken.
- Sprinkle the fajita seasoning over the chicken and vegetables then drizzle the olive oil on top.
- Pour the chicken broth into the slow cooker followed by lime juice.
- Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked shred the chicken with two forks and mix the ingredients together.
- Serve the fajitas with tortillas rice or your favorite toppings like guacamole and sour cream.
