- 1 lb. ground beef
- ½ a white onion chopped
- 2 garlic cloves minced
- 14.5 oz canned fire roasted diced tomatoes (not drained)
- 1 Tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- 2 sweet potatoes
- Olive oil
- Toppings: guacamole
- cheddar cheese
- pico de gallo
- sour cream etc
Instructions
- Begin by preheating your oven to 425 degrees and prepare a baking sheet with parchment paper.
- Scrub and wash the sweet potatoes thoroughly then pat them dry. Pierce the potatoes several times with a fork, rub them with olive oil, and sprinkle salt and pepper on all sides.
- Place the potatoes on the baking sheet and roast for 40 to 45 minutes until they become tender inside.
- While the potatoes are baking, heat olive oil in a frying pan over medium-high heat. Add the chopped onions and minced garlic and cook until softened.
- Add ground beef and seasoning, cook until the meat is browned thoroughly, then pour in the canned tomatoes and simmer until most liquid cooks off, about 5 to 7 minutes.
- When potatoes are ready, slice them lengthwise and fluff the flesh with a fork. Fill each potato half with the prepared taco meat.
- Top with your preferred taco toppings and serve immediately.
