- 3–4 boneless skinless chicken breasts
- 3 cloves fresh garlic
- 1-inch piece of fresh ginger
- 1 cup coconut milk
- 4 cups low-sodium chicken broth
- Juice of 1 lime
- Bell peppers and carrots (to taste)
- Low-sodium soy sauce
Instructions
- Prepare the chicken breasts by cutting them into bite-sized pieces.
- Mince the garlic and ginger finely.
- In a large pot, add chicken broth and bring to a simmer.
- Add chicken pieces, garlic, and ginger into the pot and cook until chicken is fully cooked.
- Add coconut milk, bell peppers, carrots, and soy sauce. Simmer for 10 minutes until vegetables are tender.
- Stir in lime juice just before serving.
