- 2 cups cooked jasmine rice cold & day-old or sub with any white long grain rice
- 1 green onion finely chopped
- 2.5 tablespoon regular soy sauce or light soy sauce avoid dark soy sauce
- ½ tablespoon sesame oil
- 4 large eggs beaten
- 2 tbsp vegetable oil or any neutral oil
Instructions
- Warm the vegetable oil in a wok or large pan. If using a wok, wait until the oil starts to smoke, but skip this if using a regular pan.
- Pour in the beaten eggs and rapidly stir to allow them to form.
- When the eggs are set but still slightly wet, add the rice, breaking up any clumps by stirring.
- Push the rice and eggs to one side, then add the remaining oil with the green onions into the empty side. Mix the green onions into the rice and eggs thoroughly.
- Drizzle the soy sauce and sesame oil around the pan edges, then toss the rice mixture until the grains turn brown. Remove from heat and serve immediately.
