Fiesta Chicken is a simple recipe perfect for a quick chicken weeknight meal or easy dinner. It’s flavorful and ideal for a family dinner when you need a delicious dish with minimal effort.

  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 small yellow onion
  • 1 pound boneless skinless chicken breasts or thighs
  • 1/2 teaspoon kosher salt
  • 2 tablespoons vegetable oil
  • 1 (1-ounce) packet taco seasoning mix
  • 1 (about 15-ounce) can black beans
  • 1 (15-ounce) can diced tomatoes
  • 1 1/2 cups instant brown rice
  • 1 cup low-sodium chicken broth
  • 1/3 cup shredded Mexican cheese blend

Instructions

  1. Slice and core the red and green bell peppers into 1/4 inch wide strips and dice the yellow onion. Cut the chicken into 1 inch pieces and sprinkle the kosher salt over it.
  2. Warm the vegetable oil in a large skillet over medium-high heat until it starts to shimmer. Add the chicken, onions, peppers, and taco seasoning, cooking while stirring frequently until vegetables soften, about 5 to 8 minutes. Rinse and drain the black beans meanwhile.
  3. Combine the black beans, diced tomatoes with juices, instant brown rice, and chicken broth in the skillet. Bring to a boil then lower heat, cover, and let simmer until chicken is fully cooked and rice is tender, around 8 to 10 minutes.
  4. Turn off the heat and keep covered for 5 more minutes to soak up remaining liquid.
  5. Sprinkle the shredded Mexican cheese blend on top and add any preferred garnishes.
