Garlic Butter Shrimp Scampi Lasagna

Description

A delicious and easy gourmet dinner featuring layers of tender shrimp, garlic butter sauce, creamy cheese, and lasagna noodles, perfect for a flavorful seafood twist on classic lasagna.


Ingredients

  • 1 box of lasagna noodles
  • 1 pound of large shrimp peeled and deveined
  • 4 cloves of garlic minced
  • 1/2 cup of butter
  • 1/4 cup of all-purpose flour
  • 2 cups of milk
  • 1 cup of grated Parmesan cheese
  • 1 cup of shredded mozzarella cheese
  • 1/4 cup of chopped fresh parsley
  • Salt and pepper to taste
  • 1/2 cup of butter
  • 4 cloves of garlic minced
  • 1/4 cup of chopped fresh parsley
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions; drain and set aside.
  3. In a large skillet, melt 1/2 cup butter and sauté garlic until fragrant.
  4. Add shrimp and cook until pink; remove from skillet and set aside.
  5. In the same skillet, melt remaining butter, whisk in flour to make a roux.
  6. Gradually whisk in milk, cook until thickened.
  7. Stir in Parmesan cheese, parsley, salt, and pepper.
  8. Layer in a baking dish: a layer of noodles, shrimp, garlic butter sauce, mozzarella cheese; repeat layers.
  9. Top with remaining mozzarella and bake for 25 minutes or until bubbly and golden.
  10. Let it rest for 5 minutes before serving.

Notes

  • For best results, use fresh shrimp and allow the lasagna to rest before slicing to set the layers properly
