A quick and healthy side dish featuring tender bok choy sautéed with fragrant garlic and ginger, perfect for a nutritious meal in minutes.

- 20 ounces (575 grams) bok choy
- 2 tablespoons neutral oil
- 1 tablespoon minced ginger
- 1 tablespoon minced garlic
- ½ teaspoon salt divided
Instructions
- Slice the bok choy in half from top to bottom or into quarters if large and rinse under running water while pulling stalks apart to remove dirt.
- Chop stalks into bite-sized pieces and separate from leaves.
- Heat oil in a large pan over medium heat, add ginger and garlic and fry for 30 seconds.
- Add bok choy stalks and half salt, stir and cook until soft and translucent about 5 minutes.
- Add leaves and remaining salt, cook for 1 to 2 minutes until tender and bright green.
- Serve hot.
Notes
- For extra flavor, add a splash of soy sauce or a sprinkle of red pepper flakes before serving
